Computer Crash- Cabbage Rolls- Tailbones

Boo. I have never experienced the "dreaded" virus download. Until today. I downloaded what I thought was a safe email. Fooled me. In less than 8 minutes- my entire harddrive was wiped clean. Gone were five months of pictures, files for PTSA, files for Spouses Club and countless other things. Honestly- not to sad about that. I figure all the photos I really love have been downloaded to either FB or Shutterfly. And the files for the clubs can be recreated or recovered from someone else. I am more mad at myself. My hubby is going to try to reformat (no clue?) the computer tonight. Basically start it completely over- like we just got it.

Luckily, like I said, it is only 5 months old. So we still have tons of warranty left from Dell. So if all else fails- we can send it to them to try to fix it.

Onto a good topic. Made the scrummiest cabbage rolls last night! Just had the leftovers for lunch. It takes a lot of my WW points but honestly- SO worth it and so easy to make!! I will have to share the recipe and also take some pictures. But honestly- they were devoured so fast!! My hubby said they were the best thing I have ever made!

Another good note- I am now down three lbs from Monday. Woohoo! Going the totally right direction here! I ran Wednesday. I am taking today off and then running Friday/Sat/Sunday. So glad to be back in the groove!

My tailbone is still killing me from falling last Monday. Cannot believe it has been over a week. It still hurts more than it really should. But there is no way that I am heading into the clinic to have my booty xrayed! No PFC needs to see anything while I am laying on a table with an xray machine! It doesnt hurt at all while I am running or even walking. It kills me to sit or stand up. Rolling from side to side in bed is excruciating. It even hurts when I cough! Craziness!

Ok now....I need to know how to make these cabbage rolls! My mouth is drooling and you left me hanging!! Help a sister out! I LOVE CABBAGE ROLLS!!

Here is the recipe for the cabbage rolls. I used one decent sized head of cabbage the other day, and it made 13 rolls.

1 cup cooked rice (or 1 1/2 half cups if using 2 heads of cabbage)
Some garlic
1 head of cabbage
1 medium onion diced (or large if using 2 heads)
1-1 1/4 lb uncooked ground pork
1 small can of tomato sauce
1-2 cans of tomato juice (i use just tomato, not V-8)

Oven at 350

Cut out the core of the cabbage and microwave for 10-12 minutes. Meanwhile, saute the onion and garlic. Mix together cooked rice, onion/garlic,uncooked pork, and small can of tomato sauce. You can sprinkle in some pepper for taste.

Prepare to make the rolls: you can use some of the big leaves to line the bottom of your baking dish, or you can use cooking spray. I do both. You can also save some of the big leaves to cover the top, but you can also use all the small ones that are too small to roll. I save the big ones just in case, but then sometimes make rolls out of them depending on how many small leaves I have left.

Trim the thick stem on the outside of the leaf before you rolls it. Scoop in some filling. Fold in the sides and then roll it up...like a burrito. Place in baking dish, seam side down. After you complete a layer of rolls, pour some tomato juice over them. Continue to layer rolls and pour juice. Once you're done, cover with leftover leaves and pour more juice over. Cover and cook for 1-2 hours.

*The other day I cooked them for 2 hours because I really wanted to make sure the pork was cooked because it's hard to tell from the color with the red sauces. They were actually in for longer...they can just hang out until you're ready to eat. The whole preparation process takes about 40ish minutes (20 for rice, and then rolling). I use a ceramic baking dish (like a dutch oven) with a lid, but I've used a regular baking dish before. And I used 2 cans of juice. So they do take a while...not a last minute meal!

It is a long recipe and takes awhile to cook but it is actually super easy! And YUMMY!

yum two quick question how many points per roll and can i subsitute brown rice for white and dround turkey for pork?

Careful with your injury. It may be embarrassing to get your booty xrayed but you don't want it to get worse either. I think I need to make those rolls! :)

Hey Becca- I actually did substitute the brown rice for the regular white. It was awesome. You could substitute the turkey for sure! When I plugged the recipe into WW... I figured on making 12 rolls and counted 2 as a serving. Then I knew myself well enough to know I would eat 3 cabbage rolls and so... I believe it ended up being 9 pts. That is with the brown rice. Turkey may change it... definitely high points but OH SO good!
